| Chef Paul at Urban Promise |
A local chef is inducted into an exclusive club.
Only 100 lifetime members make up the Honorable Order of the Golden Toque, and now Chef Paul O'Toole of Deerfield Golf Club in Newark has been accepted. He began his career early.
"I started when I was pretty young at 15 washing dishes in a restaurant. We were all on the wrestling team, and the whole wrestling team were basically dishwashers, and then I saw that the cooks were having more fun, so I said, 'You know what, I'm going to learn how to cook,'" he said.
The organization recognizes chefs for high professional achievement and distinguished service.
"I was so fortunate enough to have really great people to mentor me at a very young age," O'Toole said.
Chef Paul has been a mentor with Wilmington's Urban Promise school for three and a half years, teaching kids about healthy eating and making good choices in life.
"I look forward to talking with these kids because it really doesn't deter them from their spirit. Some of them are just so happy and so grateful for what they get and what you give them," he said.
He volunteers for a number of other ventures, but takes time for himself - a chef has to work hard to keep trim.
"I started running. I try to run five miles a day, and then try to go to the gym and lift weights," he said.
For being a great chef, he has a simple palate.
"I hate to say this, but I'm about the easiest person in the world to cook for," he laughs.
Chef Paul will be formally inducted into the order during a ceremony later this year.
